The English Garden ~ Spring Flavours

Yes, I know that Arctic winds are blowing and most of the South West of Britain is under freezing water, but gardeners are an optimistic lot, and for this reason my Editor at The English Garden magazine insists on hope and colour at all times. I provided the hopeful recipes and Jason Ingram provided the light and colour in his beautiful photographs.

 

The March 2014 edition of The English Garden magazine is now published, and, as ever, we look to the plot to create our plate. In this edition I am preparing a starter of warm prawn and crab salad with spring onion and ginger, using cut-and-come-again salad leaves which can be grown from seed on a bright, sunny windowsill. The main course is a warm and comforting venison stew with beetroots and shallots, and for pudding a rhubarb and victoria sponge cake.

 

At this time of year I layer my Victoria sponge cakes with a variety of seasonal treats:

 

Seville orange marmalade and clotted cream

Apple or pear compote with vanilla seeds

Mascarpone cream with Marsala, cane sugar and cinnamon

Creme Fraiche with Amaretto di Saronno or Kirsch liqueur, icing sugar and toasted pistachio nuts
